THE IRISH BOXTY

Patrons of the Brazen Head were enjoying Boxtys before Columbus discovered America. This is a traditional Irish dish and one of the most popular even today. A boxty is a traditional Irish Potato Pancake with a filling of your choice. An old Irish poem goes: “Boxty on the griddle, Boxty in the pan, if you can’t make boxty, you’ll never get a man.”
